INVOICES: invoices are sent out the evening before delivery.

Ham & Bacon*: Our ham and bacon are cured using nitrates.
If you do not want cured meats as part of your bulk order package please let us know.
Alternate options include hip roast instead of ham & pork belly or side pork instead of cured bacon.
Sausages: All of our sausages are gluten and binder free. Check the ingredient list. A couple have wine and a couple have sugar.

We do not use any binders or additives.
All of our recipes are free of wheat and dairy.

**Our fresh farmer's sausage and Tuscan style sausage do use a small amount of sugar and our Italian inspired sausages including our Sweet and Spicy Italian and our Fennell and White Wine Sausage do contain wine.
